Cheeseless Pizza

Hey forum members,
A guest at an upcoming pizza party is dairy intolerant. May I have suggestions about topping a pizza without using cheese/dairy of any kind please ?

If it is lactose intolerance, than buffalo mozzarella will work.  Buffalo mozzarella (like they use in Naples) has little to no lactose and is tolerated by most people with lactose intolerance.

You could also go the easy route and just do extra sauce, no cheese. My mother-in-law is allergic to cheese (Seriously, only cheese, other dairy is fine. I don't get it). This is what I do. In my opinion pizza is 75% about the sauce, 15% about the dough, and 10% (or less) about the cheese. I actually love cheeseless pies.

The buffalo mozzarella idea is a great one.  If you really don't want to do any cheese, you could do:
  • Meat lover's pizza, with tomato sauce, bacon, pepperoni and really good sausage. 
  • Tomato sauce, mushroom and onion with a drizzle of olive oil
  • Marinara, with tomato sauce, oregano and olive oil
  • Brussels sprouts tossed in black pepper, salt and Aleppo pepper (maybe with a bit of bacon underneath)
  • Potato, egg and bacon
Just a few ideas for you.
