Mistake Dough

Lastnight after dinner around 10:00,  I decided to whip up a couple pies worth of dough for the next couple days.  I made a mistake and grabbed the recipe for emergency dough instead of regular 24 hr dough.  When I realized what I had done, I figured I'd put it in the fridge and see if I could retard it to save it long enough to make it to lunch even dinner.  This morning, after 8 hrs it looks like it'll make it to lunch.  We'll see.  6 more hours....

I did a pie around 20 hrs after mixing the dough.  I kept it in the fridge until about 1/2 hr before use.  It openned ok.  A little elastic, but not bad.

It had good spring and flavor.  Not as bad as I had feared.  I froze the other ball around the 8 hr mark.

Chuck, even mistake pizza is good eats ;D .


My last pie was way more over blown than yours, I intentionally used more yeast than normal, because my notes had indicated that it was good crust 9 months ago.
We live and learn, and eat more pies!
