1st try with GM 00 and Tequila/Lime Shrimp......

Started the shrimp marinating in a tequila, lime, garlic, cilantro, olive oil, Aleppo, salt, honey, chipotle seasoning. Thinking of wrapping the shrimp in prosciutto. All that talk of shrimp on a pie in one of the other threads got me jonesin for a shrimp pie again. Made the dough with the GM 00 flour using the VPN recipe. The last several times I have made an NP dough was using the same with the SI dough so I thought it best to keep things the same to appreciate the differences. I'll start off with this....this dough handled BEAUTIFULLY!!! At 60% hydration the SI dough was VERY wet, the GM dough was not, much stronger. Tomorrow I'll see how it opens. I mixed the dough for 10 minutes in the KA and then onto the counter covered with plastic. Went back 3 times to hand knead and after the 1st time it had already became VERY smooth skinned. Lightly kneaded twice more and into a plastic tub for 2 hours at room temp. Now it is in a cooler with a container of ice over it for it's bulk sleep til morning when I'll ball it, back into the cooler and take out to room temp a few hours before baking in the BS about 1800-1900 tomorrow for supper. Also a pepperoni and maybe a garlic aoli cheese pie as I have enough dough for 3 pies. More to follow, very excited to use the new flour!!!

Dough in cooler has dropped to a steady 58 degrees and this is the activity from the bottom after about 4 hours, looking great so far. Will ball in 5-6 hours. Time for bed and kick myself into day shift/off work mode!! :P

Side question: Have you done this marinade before? I'd imagine an overnight marinade in lime juice would be too much for shrimp?

Your dough looks great, were you going to cook the shrimp on the pie or keep them raw? Prosciutto wrapped anything gets a thumbs up in my book  ;D

And I'm not sure you even need to cook those shrimp! They look perfect "as is"!

Shrimp going on, probably marinaded too long, hell it;s going on a pizza, was going to do it last nite but never got going with the dough, and YES, shrimp is yummy right out of the spicy mix, raw on a piece of flat-bread. and the aoli stuff I made last nite....still tasting it!!!!

I'm very intrigued by this one. That shrimp marinade sounds great for a blazing hot grill.

Might I suggest trying queso fresco? The literal translation is 'fresh cheese', it's a young mild soft cheese that should melt well and won't overpower those delicious sea critters. Just make sure it's queso fresco and not queso blanco.

Welllllll......here they are :-D I liked the dough a lot. Much stronger than SI at the same 60% hydration. Will head towards 65% next time. Launched on the BS at 750-800 and all 3 pies were great. Did a garlic/Aleppo aoli with cheese, a onion, gr pepper, pepperoni with mushrooms and the shrimp/prosciutto with mushrooms and a bit of onion and gr pepper. Looked for some queso fresco but the store I went to had none, no queso anything?? All and all, liked the dough plenty. Now just got to get the ball going on some starter, there were the VPN recipe using IDY

I bet the char on the shrimp added a nice dimension to the flavor. Fold over pictures look great too, thanks for the update
