I bake my pizzas in 16" round stainless steel trays. But the pizza always sticks to the tray, specially in the center. I usually end up prying it off hard using a flat edged wooden spoon.
I shape my pizzas in tray by hand, no tossing. I just flip the fermented dough balls over from oiled bowls, then shape in tray. The bowls has oil so enough oil is transferred to the tray while flipping over.
What should I do to keep my pizzas from sticking please?
