It's funny.. I'm in the process of getting the steps in place to open a restaurant, and my tech friend sent me an article about this saying that I should get ahead of the curve and create Neapolitan pizza using this technique. =)
Honestly, I understand it may be possible... but I'll believe it when I see it/taste it. I think replicating great food would be a challenge that's not going to be conquered within the next five years... or possibly even the next decade.
