hello... what do you mean the cheese bubbles off...  is the fresh mozz not supposed to melt the way they did in that pic, you feel?

The fresh mozzarella should just melt, not bubble off e certainly not brown. The main point is to have it hot but still taste fresh and ALIVE!

The dough in these pictures was made according to my own method, not even the one I have sometimes touched.
