Amazing pie,, I really love it.

Great photography also.... good lighting on some of those shots.

I wish I could have a little taste of that slice you have pictured there.

I think we have a lot of talented pizza makers here, and without seeing images
we never realize it.

Thanks for posting, I enjoyed the journey into your pizza world....  ;D

I used Buzz's giordano's recipe, but i changed it slightly to my liking. Instead of canola oil i used corn oil and i also kneaded it for 3 minutes instead of 2. It still had a great biscuit texture, but to me just a little better. And next time i belive im going to add some semolina flour and fine cornmeall.

Nice lookin' pie.

You get extra points for not using flash, too.

Hi everyone,

can somebody tell me how a pizza like this actually goes together ?

upon looking again ( just now ) I seem to see 2 layers of dough, amost like a dough within a dough.

Am I seeing things that aren't there ? or is this how all Chicago pizzas are made ?

I was always under the asumption that a Chicago style pizza meant that you make
it in a very deep dish, and the dough goes on the bottom, as does any pie...

then the toppings are just all reversed... so cheese, then toppings, then sauce on the top.

And that was it..... but I think I'm wrong now..... any fast little tutorial on this would be great
if you could.

thanks in advance.

Mark

Well yes you see it correctly, i made a stuffed pizza, which has two layers of dough. And then you have your regular deep dish with just dough, fillings and then your sauce.

Hi Chicago Rules !

Can you briefly explain how you made your pie up ? ... the steps ?

like how you put it together.... does the dough go in second to last ? and the sauce went onto the dough ( the upper dough ? )

the cheese and toppings went right over the first lower dough ?

thanks in advance if you could just do a quick "this goes first, then this, then this "

Mark

first place your first layer of dough on the bottom, and make it big enough so that there is dough drapping over the sides. Next you add your cheese and other ingredients, then you place your lst layer of dough on top and go around the edge of the pan and pinch the two layers of dough together. And now cut off the excess dough with a knife or rolling pin and finally top off with your sauce( a fair amount of sauce ). And now its ready for the oven
