Star Tavern Pie

I have fooled around with the Star pie for years.   Having grown up a short walk from it, I ate and watched hundreds of pies being made over the years.  Today I hit it.  Unfortunately I don't have my camera.  I will try it again when I  have my camera.  It makes a mess of our deck though.........   Walter

Thanks for that link.  I will have to read it further.  I can say there is very little to no semolina in their dough.  That is by my taste buds talking.  I ate there for 30 years.......  THe dough is chewy/soft.  The oil on the pans helps with that.  The consistency/flavor I get with my skillet pie is very close to star. I never put any real effort into cloning their pie but today it kind of all came to me in a vision and I went with it.  500 degree bake, my regular dough rolled out with rolling pin, sauce/cheese to the edge.  It makes a mess of the stone so I cooked it on the bottom oven which we use mostly for bread/bagels right on the spot where I put my water tray.  I cranked it to 650 for a few hours to clean it off.    Walter
