A few of my pies from last weekend

These were made from a 15hr poolish and 36hr cold ferment .
67% All Trumps, 33% KAAP
63% hydration
If you can dodge a wrench you can dodge a ball.

Haha.  I didn't even see that in there.  It was a Foodathon and my friend was flicking off the people on Facebook I guess.

Great looking pies! I am working on a similar polish workflow, however not getting as much oven spring as I would like. Can you share your yeast formula and process?

For cheese this was 70 whole milk mozzarella and 30 provolone.  I use the 6 in 1 crush tomatoes with salt, sugar, oregano and a little water to thin it.

I like the microblisters on the first shot and then those 2 big bubbles on the whole pie shot!
