I doubt you will get the health department to sign off on allowing customers access to bulk ingredients at any rate.

That was my first thought as well, then I wondered, why would it be any different than a salad bar - or the topping bar at the frozen yogurt place? If anything, it is less of an issue with pizza as it is baked prior to consumption.

The concept has it's challenges to be sure. As to the thought that there would not be demand for building it themselves, I whole heartedly disagree. Especially with the 16 and under crowd.

Through my research I have discovered ballet dancing pink elephants come at a premium, and I am trying to keep my start up costs down.  :(

If that is the case and you decide to go that direction, I would definitely suggest a pricing model that is price = $base price + x$/oz.

And use a strong dough.  ;D

I was thinking about how this could be done and make the health department happy and prevent the normal reaction, i.e. the customer would simply pile on masses of ingredients, making for a horrible pizza and and excessive food costs.  The answer is really simple:  Make it cafeteria style, i.e. portions in pre-measured small containers.  You go through the line, get your dough, your sauce and whatever ingredients you want, then proceed to the make-tables.  I would also suggest posters explaining how and also instructions on the menus.

After it is made, it goes to the kitchen, it is tightened up a bit and cooked.

I could see it working with topping kits.  They tell u what they want and then you give them a box with pre weighed ingredients.

Craig ALSO was correct is saying that all these places seem to be on the west coast.  I've looked into the idea....and frankly, i don't know if it would fly here in New England.  Too many Italians, too many good pizza places. But, I admit, people seem to be open to the idea. 

I wonder...you'd never think that Chipotle would be successful in SoCal - the land of many a great, little tacqueria.  But Chipotle is always packed out here.
 
It may be a generation thing - the younger folk are being raised with the concept of getting it "their way" or having a voice (Facebook, Twitter, Chipotle, etc all support this concept).

Chipotle has a GREAT marketing scheme....local, etc.......young people LOVE the idea.  In connecticut, all chipotles are surpisingly slow, imo.  But their current concept seems to be even MORE suitable to their set up.....

I think only little kids would want to do this....a Birthday party type deal. If you had extra space/ a room I guess you could offer that for bbooking....along with your regular "Subway" see then eat line.

"Build your own" seems to be a common catchphrase. Denny's has a Build Your Own Grand Slam and Build Your Own Skillets: http://www.dennys.com/#/menu. In the past, they have had other Build Your Own offerings.
