Not even dried oregano?  I've grown and used it fresh a lot.  Then I dried some, and I was surprised how different it was.  Not necessarily better, but dried definitely does something that fresh can't do (and vice versa obviously).

Yep, I agree. I think oregano is the only herb I'd prefer to use dried. The drying process seems to intensify the flavours.

Have to agree with posters who know fresh and dried oregano both have a place in the kitchen.  But for dried, I have to tell ya'. Buy some "True Greek Oregano" seed, grow your own, then cut at about twelve inches (before it flowers) and dry in your kitchen in a wire colander. Then you'll know what the "best" is all about. Strip off the stem and crumble as needed. Wow!

Going to try out this oregano, I haven't been all that happy with McCormick's. This looks and smells the part, we'll see how it tastes.

Looks good D.....one tip. I've learned that Mexican oreg.
can be particularly "floral".

I tried it today and I didn't like it.

This shop had different three different oregano bags. One labeled Greek, one labeled Mexican and this one. From reading the descriptions online, I'm pretty sure this is Turkish oregano and it sucks on pizza. Since the McCormick's stuff looks identical to greek, I guess the Sicilian is what I want. I'll order some online now.

The fennel seed was great though and will save me money making sausage.

Yea dude. Fresh. Pretty common technique actually. At least all over Italy or at places like Pizzeria Lola or Pizzeria Marco where I first learned the practice. Guys who work for Mario Batali putting out his product. Fresh herb holds up better in a really hot oven. Herb applied after the pizza is completed lends in element of freshness. Try it before you come out and frag someone on a food blog. What makes you an expert besides your being a supposed expert of the "floral" character of Mexican oregano anyway?
