After reading a review here of the mozzarellas by pftalor, I ordered a few balls from http://www.allevadairy.com/mozzarella.htm
Specifically, I ordered some salted fresh mozzarella, caciocavallo (dried, aged), and fresh ABC mozzarella di bufala.
Both the fresh and dried were excellent, but the bufala was sensational. It certainly didn't have the sweet taste of bufala made the same day. It even had a little bit of a tang. The texture was almost goopy, much like burrata. But when melted in soft pillows on top of a margherita, it created the perfect D.O.C.-style pie in every way. Blew my guests away.
I did let it drain for several hours on some paper towels in a collander and that did remove a lot of moisture.
At $10.99 per pound (not including shipping, unfortunately), this is not a bad price, especially since you don't need to use much per pie.
