Frank at Vesta Wood Fired Pizza allowed me to use his sporty new Diving Arm Mixer for the party I have this sunday. I needed about 55 dough balls. which is little more than Bosch can handle. Using the dough tool here I brought in all premeasured ingredirnts for a 70%- 30% blend and just dumped it in! and in 15 Min was packing up with 30 lbs of dough!!
This is Sweet Machine like a Mercedes ! smooth, quiet, nice looking and performes like a dream . One of the many reasons the pizza is so good at Vesta! The dough was mixed beautifuly have a look

Just a wild geuss here but I think if you saw this in action and the finished dough you would be ordering one next week

John it looks like on the second video that the mixer was moved to speed 2. Was there a rest between the two speeds? I can hear the arms "glopping" through the dough. I'm guessing that is alot of oxygenation.

Yes speed 2 here is what the dough looked like after bilk refridge 36hrs was beautiful
posting party over in BIG GUY oven thread as I said I made 50 dough balls for this party fun fun
