100% whole wheat pie. Villa Roma recipe

Hi,

This is one of my 100% whole wheat pie using villa Roma recipe.
I use KA premium 100% whole wheat flour. I replace the regular milk by almond milk.

I was expecting more sticky dough but with more flour on table was ok to handle.
Other thing is that once the dough was ready for the pizza it stretches but it did not go back it was not as elastic as caputo for example.

I use 100% hydration. 

Next time with the same type of flour I would try with 90% to see how it goes, I feel that the dough will be better with less water.

Here are the photos and new formula that I used.

Of the total flour 30% was caputo and 70% was KA whole wheat

Here is the recipe of the 100% whole wheat pizza, 100% hydration.
The only difference is that I did not use absorbic acid and I used homemade almond milk instead of dairy milk.

Sorry for my late
