Article on blood sugar benefits from sourdough starter in bread

This article on Readers Digest states that the glycemic index of bread drops 25% because the lactic acid eats up some of the sugar. It also remarks about rye being sourdough somehow already in order to rise due to lack of gluten. I had never heard that, but I imagine I was screwing up rye bread all along.

Also I might add that it does help with gluten intolerance (sourdough). This might be a good tid-bit people could put on their menus if they use sourdough. People think gluten is the devil so it might help.
