Scott, Good luck on your new venture sounds like you have a very different pizza style that you are going to do. i can say i have has some amazing non neo wood pies this year that really have me thinking about alternate styles!
my mobile oven buisness is three years old. i can tell you looking back what i can produce now out of my setup, i never would of thought possible three years ago.
