 Scott, Good luck on your new venture sounds like you have a very different pizza style that you are going to do. i can say i have has some amazing non neo wood pies this year that really have me thinking about alternate styles!
  my mobile oven buisness is three years old. i can tell you looking back what i can produce now out of my setup, i never would of thought possible three years ago.
  i definitely would love to visit you once you are comfortable with you setup. again good luck!!

it's shipping weight is 6500, but that includes the crate.    It's a biggin at 5 feet internal diameter!    I wanted to be able to handle a lot of pies at once since the temp isn't gonna be sky high.   This one is the same shspe/size as Chris biancos ovens, and definitely has a lot of thermal mass under and around the oven.  I figured I would start with this oven, and if its too big, or if I move to faster pies, at least the truck is built out to handle the weight of a Neapolitan oven, which can be retrofitted in place of this one. Can't wait to meet everyone, and again thanks for all the kind words and encouragement!
