Hi there, I am looking for a 2 day dough recipe to use with Caputo 00 flour. I have doubled the King Arthur recipe below and had good results but really want to try with the Caputo 00. Also, I will be cooking in a wood burning oven.
Any help is greatly appreciated!
1 cup King Arthur Unbleached All-Purpose Flour
1/2 cup water
1/8 teaspoon instant yeast
I mixed together the flour, water and yeast and let is rest room temp overnight
3/4 cup water
2 1/4 cups King Arthur Unbleached All-Purpose Flour
1 tablespoon + 1 teaspoon Pizza Dough Flavor (optional, but delicious)
1 teaspoon instant yeast
1 1/4 teaspoons salt
1 teaspoon sugar
1 tablespoon olive oil
