Post your Super Bowl party pics here!!
« on: February 01, 2014, 03:19:11 AM »
I know a lot of forum members will be having Super Bowl parties on Sunday and a lot of great pizzas and other food will be served.  Take a few pictures of your festivities (food-related or otherwise) and share them here.

I'll be making 6 laminated thin crust pizzas as I (hopefully  ::)) watch the greatest offense in the history of the NFL take down this season's best defensive team.

Well I hope at least the food was good.  I thought Denver would have a tough time, but holy smokes.

The pizza and the snacks were great -- the game -- not so much.  ???

A few of the pies: 1st was a pesto, ricotta and salami. 2nd a pepperoni and mushroom, 3rd, homemade sausage we made last night following Garvey's procedure at http://www.pizzamaking.com/forum/index.php/topic,17662.msg171285.html#msg171285  (highly recommended!), 4th a pepperoni and sausage.

Nice pies.  Damned nice.  I've never made a bar pie.  I need to soon.

Impressive line-up. Can you tell me more about that NY style, I like the looks of the sauce and how the cheese melted.

Thanks JKB and Dave.

JKB,

Your pizza looks really good too.  Vermont pepperoni?  That fried calzone also looks tasty.  Do you just make a calzone and then deep fry it or do you coat it with something before frying it?

Tim

JD/RMP:  Thanks.

The NY pie:

20" 0.07 TF
72 Hour cold ferment

100% AllTrumps bleached/bromated
63% Water
0.17% IDY
2.0%  Salt
1.0%  Oil
1.0%  Sugar

Mix 40 seconds in food processor.

My oven only goes to 500F.  I can turn the knob past that before the broiler kicks on.  If it was linear, it would be about 525?, but I don't know what it really is.  The stone is a 20" round cordierite in the top 1/3rd of the oven.  Bake time was a little over 6 min. (I got distracted frying the wings).

Sauce is Sapporito thinned with some stick blended Sclafani whole tomatoes.
Cheese is a sprinkling of Locatelli and WM Sorrento.
Pepperoni is Carando (My new favorite).

The calzone is the same dough formula with an 8 hour biga and a 4 hour ferment at room temp.  Filled with ricotta, mozz and ham and fried @ 375F.

Your ratio of cheese vs sauce is perfect.  Great work!
