I was visiting LA, and I had something a small store there called a cheesewiz (no relation to the brand name product). It was great. I got the basics of it from the owner, but not the actual recipe. I would love to be able to able to replicate it somehow.
Here is what I know:
It is made from his regular pizza dough (which is a fluffy dough)
It is fried. But only a little crispy.
The filling is cheese (no clue which type), tomatoes and bacon bits.
It basically dough wrapped with the filling inside it. when done, it is served in a pie pan it is about 3 inches tall. There is dough on tope and bottom and all around on the sides. When you cut into it there is the filling.
Then it is sitting in pizza sauce.
Here are two pictures of it frozen and not put into pizza sauce yet:

1) How can I make the dough so it will have the filling like this?
2) what is a good llighy fluffy pizza dough recipe?
Thanks
