This was one of my better pies to date.  The new cheese, 7/11s and pepperoni are way better than what I was using before.  Not to mention easier on my wallet.  This 16 incher cost me only $2 to make.  Thank the heavens for restaurant depot!

16 inches.  Doughball weight was 536g.

Poolish:

162g flour (which was half the weight of my total flour)
162g water
1/4 tsp IDY

I then added remaining half of the flour, the water, salt, sugar, oil and another 1/4tsp IDY to the fermented poolish.

It's RDs house brand, Supremo Italiano.  Just as good as Grande I think.

I still add a little provolone into the mix though because straight mozzarella just doesn't do it for me.
