Dough Formulation for this Pizza Concept?

Hi all,

I am looking to do something similar to the DIY style pizza places such as Blaze, PizzaRev, Pieology.  I will most likely be going with a GAS Woodstone Firedeck 8645 as shown in the picture below. I know that these ovens are very expensive and perhaps overrated, but they are the most visually appealing from what I've found, and the marketing aspect is important to me.

I'm doing this in another country where the people are tinier and therefore will offer two sizes, an 8 inch and a 12 inch. I need something that will cook within 3 minutes. Similar to Blaze, I'd like something that is thin and crispy, but not cracker style.  I guess the popular choice for these types of ovens is Neopolitan.

I'm hoping to get some help finding a step by step dough recipe that will fit what Im trying to do.  Any suggestions?
