What's on the menu for pizza night?

In my house, Friday Night is pizza night.   I usually make the dough Wednesday night, though last night I was busy and will have to make it this afternoon after work.

I'm making two NY pies Friday.  Anchovies and Turkey Sausage.

Since joining this forum, I've begun using words like "autolyze" and have become anal about baker's percents.  My dough is forever changed.
