New Member - Want to get started today

Hi all-

I am new to the forum and have found myself with a bonus day off due to heavy snow today. Since I am snowed in, I thought I would jump right in and try making a few different doughs. I will be starting a few multi-day doughs to play with over the weekend, but just wanted to check-in and see if anyone had a favorite one-day New York style dough using instant dry yeast that they use in an emergency that I could prep for dinner tonight.

Look up a 6 hour poolish. I know there are a few good ones in the forum.
I do a 200g KABF.  200 water. 1/4 tsp ady.  Mix and set for 6 hours. Then 500g KABF and 240g water. And mix of seasonings.

JerryMac's dough formulas are among the best on the forum.  You won't be disappointed.
