I second what VCB posted, except I wouldnt even bother with the warm initial rise. Just plop the whole thing into the fridge as soon as it's done kneading and see how you like it the next day. The .75% IDY you're using now should be fine. Oddly enough, if you drop IDY to .50%, your recipe is identical to my Pizza Factory clone, linked below. Check it out if you're interested.
