What hydration rates work best for different styles of pizza?

I always look at the suggestions under the Tom Lehman dough calculator to make sure I'm doing the best hydration for NY style whenever I do that one. With Sicilian I tend to do 70% or a little less. On top of all this I'm finding that using different grains makes the absorption even more confusing.
