Looking to add pizza to my store.  This site looks like it can be very helpful as I am a new pizza maker. I have been driving myself crazy practicing making dough and baking on a pizza stone in a regular oven.  I have been using all purpose flour, now I found out high gluten is better to use as it stretches better, which isn't easy to find :( I also need a good pizza sauce, canned or homemade. If I ever get all this down pat, I plan on ordering the pizza oven, dough machine, prep table, etc.  Any help out there would be appreciated, since you are the experts.

Welcome Shari,
As you probably noticed, this is a rather large forum with many people just like you.  To find the information particular to the style of pizza you are interested in, you'll want to master the search in the upper left part of the screen.  IMO, many bright minds have debated "good pizza sauce", for example, and frankly all your other key words so you'll need to decide method best applies to your situation.
