sourdough starter in chicago thin crust?

hi gang!  I cant recall any discussions in Chicago style, but my wife bought a sourdough starter and it is ALIVE!  ALIVE!!!  anyone know how I substitute for like 10g ADY?  do I compensate for water and flour too?  thanks in advance!  you guys rule!
