Alright
I know that this might have been discussed on the site someplace, but I have to ask:
When measuring out the hi glut flour( I have KASL) do you just dig in to the bag with the measuring cup and level the cup off
OR
Do you use a spoon to dig into the bag and then transfer to the measuring cup(like in most baking applications) and then level off the cup?

also
do you sift the flour once measured?? to airate???
I have a scale to measure by wieghts but have not tried to make dough this way yet
Any help here.
The reason I ask is that in comparison to bread dough(and I know that pizza dough is not bread dough) the pizza dough that I end up with is very flimsy, not as solid or firm as bread dough or the dough that I see on TV or in pizzarias.
