Hello this is JoeE I live in the south suburb of Chicago Palos Heights. I've been making pizza about 20 years. Most recently I purchased a blackstone outdoor patio oven and I'm interested in moving away from my current dough recipe using a starter to one using double 00 flour and a retarded rise in hope the new oven will get hot enough to cook said dough correctly. I found this site while searching for Caputo double zero flour sources in south Chicagoland cheers
