Hi,

Here is my first one Neapolitan Calzone (ripieno) of my small experience of pizzaïolo, Gino Sorbillo's recipe, 67 % of hydration, cooks with my oven Effeuno F1.

Magnificently good  :drool:

Calzone Napoletano : ricotta, Salame Milano (normally it is napoletano, but hard to find that in France), Fior di Latte, cherry tomatoes, olive oil, and fresh basil napoletano to block the hole ;)

If you look at the definition of Other Types on the main index page, you will see that the forum has a separate board for things like calzones.

I think, near 450-490°c
