Alton Brown's I'm Just Here For More Food

I just ordered Alton's new book on Food X Mixing + Heat = Baking. I would be interested in members feedback on the dough section. I hope to come away with an understanding on why ingredients and recipes work in addition to how.

Just picked up a copy of this book yesterday at costco in Canada for $28.99.I took a quick look through the dough chapter and it looks interesting.Gotta like Alton chef and a mad scientist mixed in one.
