I am so nervous/scared/excited

I let my dough sit in the fridge for 2 days. It is my first time. Before this, I only let it rise 2 hours. I am going to use the dough tonight. I feel like I am about to have a life changing event  :pizza:

Make sure you set it out at room temp for about 4 hours in a covered container large enough to allow it to rise and rest. Then it will stretch easily. ---pete---

You guys are hilarious .. I have to go to Berlin tomorrow on biz.  I suspect there isn't a great pizza joint there but ya never know.  Making a 5 day CF pie for myself tonight for my fix just in case.

Haha, this place is great!

My pizza was great too! This is the best dough I ever made. It actually was elastic this time. It is the first time I shaped the dough the "new" way, pushing down around the perimeter first to form the crust. The baked crust was springy and soft with a nice crispy shell. Next time I will use less flour so I can thin it out a bit more and also have a smaller crust. Here are a few pictures, comments or critiques are welcome!

Thanks buddies, I am going to try less flour next time. This time was 3.5 cups (I don't have a scale yet) and next time I will use 2 cups.

My oven only goes to 525... one day, I will have a house where I can build a brick oven.

Although you have not indicated what recipe you are using, I can tell you that a change from 3.5 cups (no matter how accurately you measure) down to 2 cups is a huge/dramatic/really big change.  You could, quite likely,  get a wet gloppy mess.

Also, what is the problem you think you are likely to solve?

Think small increments, much smaller.  (like 3 1/4 cups, for example).
