Josh,

You might also want to read what Tom Lehmann had to say at Reply 14 http://www.pizzamaking.com/forum/index.php?topic=18124.msg180715#msg180715

I have seen pizzas sitting out at the shore in NJ so they also might have a 4-hour rule.

Thank you for the link Norma. The 4 hour rule makes perfect sense. If one pizza sits out for longer than 4 hours in NY, it probably wouldn't be worth making in the first place.

It`s food, not crack so all the rules apply.  As long as no one reports you ya get away with it.

Just out of curiosity, at what temperature do you store crack?

Here in Oregon, if you can hold pizzas at 70 degrees Fahrenheit or below you can keep them for 6 hours. Otherwise you get 4 hours.

Section 81.10 of the NYC Health Code lays out the law of NYC and that is consistent with federal regulations noted in the bill to amend Section 81.10 (posted earlier).

David,
This topic comes up frequently. Many members who probably know have said things that read like an opinion. Thanks for posting the link. That makes it very clear. I think it may also explain why slices are offered with specific and limited toppings when intended to be sold as slices.
Cheers,
Don

For the record I  got Totally sick (food poison) from a meatball slice that was hanging around a Jersey display case for  probably most of the day.?
Was one of the worst evenings/mornings of my life ! Was My Birthday  so I bareboat chartered  a 40' sailboat with a facility that was not too large, It was troublesome to say the least  :-D
and I almost forgot about it until this thread came up!
