Pizza brain for supper

A slightly modified DKM thin crust.
Made it before work so I am trying the 9 hour rise per the instructions.

It was tasty DKM and very crisp.   The only problem was this eight hour rise pizza was much more difficult to roll out and shape than the overnight one.  It could be the relatively cool kitchen today.  It might need a bit more water or warmer water.  Anyway, it was nice to have a pizza that you could make in the morning then pan that afternoon.

Honestly, it is the one I have the most difficulty with.  

I think a warmer, more humid kitchen probably would have helped.  This crust is certainly a lot more sensitive to moisture.

I only get to test a thin crust once in awhile.  This one had onions roosted bell peppers pepperoni and hot Jimmy dean with a few crush red peeper flakes for a little more spice.

It should reheat nicely.

I just mad a thin crust onion, roasted pepper and pepperoni for dinner. :o
Had I put Jimmy Dean on there I may have thought that this sight creates some freaky mental bond with its users.
