Napolitan method of making the pizza dough...

Hi does anyone can tell how is the tradicional napolitan method of making the pizza dough(mixing the ingredientes, folding etc?or tell me a post where i can learn it???

Pete ezza...i read on a post by pizzanapoletan(marco) that the napolitan method was quite diferent from This one on reply57...i would like to know more about that method that he spoke....do you know where can i find that info???

There are a couple of ways that come to mind that you might try. First, you can use the forum's Advanced search feature at http://www.pizzamaking.com/forum/index.php?action=search and search Marco's posts using his user name pizzanapoletana. Or, you can go to Marco's profile at http://www.pizzamaking.com/forum/index.php?action=profile;u=417, click on Show Posts, and scan his posts until you find what you are looking for. Better yet, would be to read all of Marco's posts. They come as close to any book that Marco might have written on the subject of Neapolitan dough and pizza. I have read all of his posts more than once and I learn something new every time. And I am not the only one who has done that. From time to time I will see a member on the forum for long periods of time obviously reading Marco's posts.
