for those who use 24 hour proof method.. do you let your dough rise for a while before you place in fridge, or do you put it right into the fridge after the kneading?? I have been letting my dough rise for about 1 hour before I place in the fridge... just curious..

I am gonig to make some dough in a minute, I will put it right into the fridge... I want to see the difference, the texture of my last 2 pizzas were not what I like, time for a change..
