For those who are interested, there is an article by Tom Lehmann on thickness factor (aka density loading factor) at http://www.pmq.com/mag/2004november_december/lehmann.php. Also, for some typical values and ranges of thickness factor, see Reply 1 at http://www.pizzamaking.com/forum/index.php/topic,12243.msg115759/topicseen.html#msg115759.

The thickness factor is more of a way of determining how much dough to use to make a particular style of pizza of a particular size. Two pizzas with the same thickness factor can yield a different finished crust thickness if the skin is rolled out with a rolling pin (e.g., to make a cracker style pizza), or allowed to rise before dressing or baking (e.g., to make a Pizza Hut pan, Greek-style, Jet's or Buddy's pizza), or the skin is formed without a rim (e.g, a cracker style pizza). I think the Lehmann dough calculating tool and the thickness factor values given in Reply 1 referenced above work quite well together.

I am aware of only two errors in all of the dough calculating tools. One is a decimal place error for diastatic malt in the expanded dough calculating tool and the other is in the stuffed dough feature of the deep-dish dough calculating tool. With the hundreds of data points, I am surprised that there weren't many more errors.

Boy Hits Car volunteered to do the programming of the dough calculating tools and we spent months working together to bring them to fruition. We also "beta" tested them with some of the most knowledgeable members in each pizzza specialty area before they were rolled out. We got some very good inputs from those members and they were incorporated for the most part into the final tools.

I even remember when Boy Hits Car volunteered to do the work. It was in Reply 32 at http://www.pizzamaking.com/forum/index.php/topic,3399.msg28963.html#msg28963. I remember it because I almost fell off my chair. I think he was the last member to actually volunteer to do some work to help the forum. We get many requests and ideas for improving the forum but no one wants to do the work or help pay for the improvements. This is an open, free, not-for-profit forum where no one gets paid for anything, so nothing really gets done without volunteers. Just about everything that one sees on the forum in the way of tools were prepared by the Moderators or Steve, the owner and Administrator of the forum, and by Boy Hits Car. Another member, November, contributed the tools at http://foodsim.unclesalmon.com/. He owns those tools, not the forum.

Are there any others interested in an iPhone/iPad version of this tool?  I develop iOS apps and always wished I had this dough calculator on my iPad!

Check out 'DoughCalc' on the app store.  It's a simple tool that you can use to convert between bakers percentages and mass.

Yes I would pay a few bucks for this on an iPad

My fear is this website goes down one day and I don't have access to the page!!!
