I just wandered over on ebay and now I am shoving my foot in my mouth.
There are some nice table top dough sheeters for sale. Don't say I didn't warn you!

I have had good luck with a Kitchen Aid dough roller. For the larger pies I just lay 2-3 sheets of the dough beside each other with a 1/4" overlap and use a rolling pin to "glue" them together.
