I am new to the forums and love to make Pizza. I lived in Montreal for 18 years and I miss the pizza so much. It is not like anywhere else in Canada. I have been trying for the last few years to try and recreate that taste with limited success. I was wondering if someone has some montreal type sauce recipes? My favorite pizza was Pasquale's but any recipe that you guys can share would be great.
For people that have never been to montreal, most places use a sauce that is unique compred to the major chains. It is not zesty and heavy (like dominos or pizza hut) it is more watery and salty. The crust is a bit chewy, not too thin not too thick...it is common to see big air bubbles in the crust as well.
I am still experimeting with crusts as well so if someone has a montreal style crust recipe, pass it along!
