Charlottesville, VA, pizzeria?
« on: October 04, 2006, 09:25:45 PM »
A couple of years ago, I ate at a restaurant on the downtown mall in Charlottesville, VA, and the pizza there was a thin, round hearth-baked crust that was folded over on the edges.... kind of a stuffed crust, but with no cheese inside, only folded dough, kind of like a tart.

Anyone know the name of this restaurant/pizzeria? I'd love to call them and ask for ingredients or secrets to this pie.

Thanks,

Scott

I don't know the answer to your question, but have you ever been to Crozet pizza?  I was in C'ville for a couple months and LOVED that place.
Since joining this forum, I've begun using words like "autolyze" and have become anal about baker's percents.  My dough is forever changed.

Gimbo is right, and they have expanded to have 2 more locations.  I may actually be headed there tonight with my 2 kids.  But their stuffed crust pizza is only one of their types.

I think Crozet Pizza has a strong following, but the last time I went there, I thought it was expensive and not all that great.
