Neapolitan pizza calorie content

Does anyone know what is the average calorie/nutrient content in a properly-made neapolitan pizza?

From Marinara to Margherita with Mozzarella di Bufala for 100g:

149-188 kcal

Carbohydrate 19-25g
Proteins 4-8g
Fat 3-8g

For one 13" pie

Flour 170g x 4 = 680
Cheese 4 oz x 85 = 340
Tomatoes about 20

Total about 1040 calories

For one 13" pie

Total about 1040 calories

How did you work that out?

A marinara 12", finished, weight (before baking) 336g maximum, a margherita 416g Including all topping (lab results)

So total weight for Pizza Napoletana calories should be at around:
 500 kcal per Marinara
782 kcal per Margherita with Bufala (more fat).

I think once Roberto caporuscio told me that he had an article from a famous US Newspaper that did a comparative analysis between Pizza Napoletana and US pizza and the results were that Pizza Napoletana was much lighter and better nutritionally balanced.

A 300 g dough ball is about 185g of flour. I figure you probably go a little lighter, so I used 170g. Flour, like all carbs, is about 4 calories per gram.

Cheese is usually about 100 calories per ounce (28g) but mozz is  watery so it's a little less. I saw 85 on a chart somewhere and that's about right.  You probably use just 3 oz, so let's bring that number down to 250.

The tomatoes are about 70 calories per cup, which has got to be at least 3 pies. So it's around 20.

So at your size pie it's around 950 kcal.

I believe this is an abreviated account of the information you are refering to Marco:

Madelyn Fernstrom of the UPMC Weight Management Center (University of Pittsburgh Medical Center )  c. 2004 came up with the following information:.
The weight management center has been analyzing the pizza made by Roberto Caporuscio.

Fernstrom's department has calculated that the 5-inch Regina Margherita pizza has 461 calories, 16 grams of protein and 9 grams of fat. That's close to 420 calories in just one slice of an extra large cheese Pizza Hut pizza (cut in 12 pieces), according to that restaurant's nutrition facts. That one slice has 15 grams of fat and 20 grams of protein.

A 12-inch medium cheese hand-tossed Pizza Hut version (at 240 calories a slice -- cut in eight slices for a medium) would have 1,920 calories. That compares with a 12-inch Regina pizza at 800 calories.

My 780 calories for the Bufala Margherita are very close to the 800 in the report.

Jeff,

our dough ball is 250g.

All the analissys I have reported were run on actual ingredients used to make a proper pizza napoletana

My data refer to a Study in Naples, and David's to one in Pittsburgh and still are very close.

In most pizza, the calories from the 108 fat of the pizza are 781. Maybe it is for the common flavors and brands. I’ve read a review about the Neapolitan pizza and it is just like that.
