Jeff's Dough Recipe w/o a culture, just IDY

I've cut the lock on my oven and I'm ready to start experimenting w/ pizzas at 800 degrees.

I don't have a sourdough culture yet. I'm wondering if I can use Jeff's dough recipe with Just IDY?

Has anyone tried this?

yes, just use a very tiny amount. go with 1/8 teaspoon for a batch of 3-6 pies

3-4 days.  Remove 1-3 hours before baking.
Making Pizza is not cooking, it is Performance Art!
