Semolina - how old is too old?

I have some semolina that's been stored in one of those airtight, nearly impossible - to - open stainless canisters. I opened it, and it smelled okay, but it's probably been in there for 3 years or so.

So...  way too freakin' old?  What think ye?

It's probably ok, but...I wouldn't use it. Grains like most foods lose favor with time, even though not to the extent of say dried herbs there is loss of flavor IMO. Performance characteristics I'm not sure about.
