Window pane problem
« on: November 09, 2006, 04:29:02 PM »
Followed NY style Raquel recipe to the letter, KA mixer, KASL, Italian preferment, autolyse, then 2 min hand knead and attempted to window pane. Dough stretched out pretty niceley but I'm getting pinhole tears when I try to get close to transparency. Should I be letting the dough rest some more after the hand knead? Can someone give me the proper procedure for windowpane test?
Thanks much,
Mike

Sorry, just noticed the other thread, not gonna worry to much, as pizza came out pretty good after 24 hr ferment. Got more from same batch in the fridge, will give it another day or two, then fire up the oven!
