Followed NY style Raquel recipe to the letter, KA mixer, KASL, Italian preferment, autolyse, then 2 min hand knead and attempted to window pane. Dough stretched out pretty niceley but I'm getting pinhole tears when I try to get close to transparency. Should I be letting the dough rest some more after the hand knead? Can someone give me the proper procedure for windowpane test?
