What yeast are you using Wayne and was it in date?  The SAF yeast I use is instant.

Here's something that makes a big difference:

Use bottled (non-chlorinated) water when making dough. The chlorine in city water will kill some of the yeast.

Thanks also Steve, yeah it was kind of funny to receive the can also. Sort of like when you were a kid and mail came.... Wooohooo! Who gets to open the package? :D
