00 Flour

Italians use a very soft flour for pizza making called "00" (double zero).

I made my own by combining two-thirds all-purpose with one-third pastry flour. I liked the results on a thin crust pizza.

BTW, a great--and easy-- thin crust pizza sauce can be made with a small can of tomato sauce mixed with garlic and herbs.
