I've just figured out that I can use fresh bocconcini (comes in brine) cheaper than I can use most other pizza cheeses around here. My question: how long can I store bocconcini? Ideally, I'd like to buy a few large balls of it, and then just use them up over the next three weeks or so. Can I just put them in the fridge? Do I need to keep them marinated? When do they "go bad"?
