Deep Dish Pan
« on: December 20, 2006, 09:12:04 AM »
I bought this deep dish pan for my husband for Christmas

http://www.amazon.com/10-Deep-Dish-Pizza-Pan/dp/B0001MRSA2/?tag=pizzamaking-20

Im now reading that the PRE SEASONED TUFF-KOTE may have been a better choice?

We have been trying to make deep dish pizza for years & I was hoping this new aluminum pan would be a good choice?

What do you think?

carolinagal,

The pan you bought should work OK but you will want to season it. As noted in the following item, an aluminum pan will reflect heat rather than absorb it, as a dark anodized or well seasoned pan will do: http://www.pmq.com/cgi-bin/tt/index.cgi?noframes;read=30240. With repeated use, the aluminum pan will progressively darken and perform better. With a dark anodized pan, such as shown at pizzatools.com, for example, there is no need for seasoning. A comparable pan with the dark anodized coating, however, will usually cost more than double an uncoated aluminum deep-dish pan.

Thank you for the suggestions, I will definetly season it prior to use!

If I do decide to purchase a dark coated deep dish pan in the future, where can I purchase one online?

Thanks
