They say you can't tell a book by its cover, and I have never heard of any way to tell what a cheese will be like by its package (except for preservatives, binders, artificial stuff, etc, which is prob not a good sign).
So it's try 'em and see if you like 'em thing. Having said that, whole milk mozz will generally take more heat than low fat, low moisture and in my experience tends to have more flavor. Grande is a brand often preferred and mentioned in many posts and used by many pizzerias. It is only avail mail order or thru restaurant/pizza supply wholesalers, although many have found such sources that sell to the public in their locale. I have also read that some use mozz from Costco's or Sam's Clubs and the like. Maybe try a forum search for mozz or even your state and see what pops up for some ideas. BTW, some buy large quantities mail order or whatever, then freeze most of it and report no ill effects. This keeps the price down and allows access to brands that are just not available any other way.
